No, it’s not St. Paddy’s day! Just chocolate chip cookies, elevated with mint!….mmmm…mmmm…great!
2 cups flour
½ cup vanilla pudding mix (dry)
½ tsp baking soda
½ tsp salt
½ cup butter, softened
1 cup white sugar
½ cup sour cream
1 tsp mint extract
10-12 drops green food colouring
1 ½ cups chocolate chips
Preheat oven to 350oF Convection Bake.
Cream butter and sugar then egg and mix well. Fold in sour cream, mint and food colouring.
In a separate bowl, combine flour, pudding, soda and salt together. Whisk well.
Add dry ingredients into butter mix and combine. Mix in chocolate chips.
Drop small portions (1 oz) onto a greased cookie sheet. Bake for 8 to 9 mins. or until edges are browned.
Cool on a wire rack before serving.
Makes 36 cookies.
