Beef Fajitas

Here’s our take on a favourite Mexican fare that’s sure to be a fiesta for your palate. Olé

Ingredients:

1 red pepper, julienned
1 yellow pepper, julienned                                09 Aug sweet-pepper
1 orange pepper, julienned
1 white onion, julienned
3 oz chipotle peppers, sliced
1 tablespoon chili powder
2 teaspoons paprika
1 teaspoon thyme
Salt and Pepper to taste
* 12 ounces stir fry beef
4 corn tortilla wraps

Method:

In a large frying pan, saute peppers and onions until softened. Add in chipotle peppers, chili powder, paprika, and thyme, and cook until all are softened

In a small heavy pan, sear the stir fry beef to desired doneness.

Place wrap on a sanitized surface, add pepper mix, beef mix and season with salt and pepper. Fold up the sides of the wrap before rolling it closed. Sear the edges with the hot frying pan to prevent them from opening while eating.  Serve with salsa and sour cream.
