From Sara’s Kitchen, Trail Appliances, Calgary South
1 ½ cups crushed graham wafers
3 tablespoons icing sugar
¼ cup melted butter
1 large eggs at room temperature
1 cup sugar
1 8 ounces package cream cheese, softened
1 cup sour cream
1 small can crushed pineapple drained well
Fill your TRAEGER GRILL with Alder wood pellets (these are the mildest wood pellets) and heat to 350 degrees.
Mix crust ingredients and press into a spring form pan. Put in Grill for 10 minutes.
While grilling, mix the filling ingredients in a food processor or with a mixer. Pour filling on top of crust. Bake in Traeger for 1 hour at 350 degrees.
No matter how tempting it is to see how the cheesecake is doing, do not open the lid while it’s baking so the heat does not reduce.
Once the cheesecake is done, let it cool on a cooling rack before transferring it to a plate. Chill and serve.
Optional: Top with fresh fruits.
