Finger Licking, Moist BBQ Chicken

Ingredients

1 whole chicken
3 tablespoon kosher salt
5 cups ice water
1 tablespoon paprika
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoon Sara’s green stuff
1 cup ketchup
1 teaspoon salt
1 tablespoon maple syrup
1 tablespoon paprika
1 teaspoon pepper
1 teaspoon garlic powder

Directions

  • Soak chicken in salted ice water for 1 hour
  • Pat dry and rub with paprika, pepper and garlic powder
  • Put chicken on very hot barbecue and lightly scorch
  • Mix all sauce ingredients, including Sara’s green stuff
  • Brush sauce on chicken and keep turning
  • Check the chicken’s internal temperature with a thermometer inserted in the thickest part. When it reaches 165 degrees, turn the barbecue off and let chicken sit for another 10 minutes with the lid closed

Cut up the chicken and enjoy with a nice potato salad and grilled corn or your favourite side!
