Zucchini Spice Cake


2 cups flour
2 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 tablespoon Cinnamon
¼ teaspoon cloves
1 cup mini chocolate chips
2 grated zucchinis (2 cups)
3 eggs
2 cups sugar
1 cup oil
2 teaspoon vanilla
1 cup chopped dates or raisins or walnuts if desired


Mix eggs and sugar in Mixmaster or food processor.

Add oil and vanilla.

Add the rest of ingredients.

Beast just until mixed.

Pour into a greased and sugared Bundt pan or 9×13 pan or 2 loaf pans.

Bake at 350 degrees for 1 hour.

**TIP: when a cake recipe calls for a greased and floured pan, I like to use sugar instead of flour so the done cake has a sugary top.
