Holiday Eggnog

Ingredients: 6 cups

4 egg yolks
1/3 cup white sugar
2 cups 2% milk
1 cup whipping cream (35%)
1 teaspoon nutmeg
Pinch salt
1 tablespoon sugar
4 egg whites

Separate eggs.

In an upright mixer, beat the egg yolks until they begin to lighten. Gradually add sugar until dissolved. Set aside.

In a heavy bottomed sauce pot over medium high heat, combine milk, cream, nutmeg, and salt until scalded, stirring occasionally. Remove from heat, and slowly temper into egg yolk mixture. Once tempered, return to the pot and cook over medium heat until temperature reaches 165°F. Pour into sanitized bowl and place in the fridge to chill.

Beat the egg whites into soft peaks. Add in 1 tablespoon of sugar and continue to beat until stiff peaks form. Whisk the egg white into the chilled mixture, and allow to stand 30 minutes before serving.
