2 pounds cooked turkey, diced small
2 onions, diced
1 carrot, diced
2 stalks celery, diced
3 tablespoons butter
4 litres chicken or turkey stock
1 teaspoon smoked paprika
2 teaspoons thyme
Salt and pepper to taste
*Leftover additions: stuffing (chopped small), mashed potatoes, turkey gravy, root vegetables (carrots/parsnips)
Sweat onions, carrots, and celery in butter until softened, then add cooked turkey and increase heat to medium high.
Add stock and bring to a low boil over medium heat.
*for adding cooked leftovers, add them in at this point, as the soup is simmering. Allow five minutes for them to incorporate, then add herbs and seasonings and allow five more minutes to stew. Serve hot.
