2 teaspoons avocado oil
3 large eggs
2 ounces chard or spinach
½ cup shredded mozzarella or cheddar cheese
1 tablespoon heavy cream
In a bowl whisk eggs and cream together.
Heat the avocado oil in a fry pan on medium/high heat. Add spinach and cook in the oil for 1 minute.
Add in the egg mixture and leave until egg is cooked enough to flip. Flip entire omelette and sprinkle on cheese. Once cheese has started to melt fold the omelette in half.
Makes one 3-egg omelette
