Coffee Cake from my Favourite Aunt

By – Sara Brodsky, Culinary Services Coordinator – Calgary South

I have been blessed with many Aunts that I loved for various reasons. My Auntie Shirley who I believe I take after was the Aunt I visited into adulthood and was there for me through thick and thin. I would drop in for a good dose of Auntie Shirley time often for advice, a laugh or yummy food. She knew this was my favorite cake and upon hearing I was getting married she started baking this cake in various forms: loaf, bundt, 9×12 pans and freezing them in tinfoil with funny little notes on all of them. I think of her with a full heart whenever I make this cake.

Coffee Cake6 tablespoons butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 cup sour cream
1 1/3 cup flour
1 ½ teaspoons baking powder

Filling and topping
¾ cup pecans
½ cup brown sugar
2 teaspoons cinnamon
1 tablespoon cocoa
1 cup chocolate chips

Mix baking soda and sour cream and let sit for 5 minutes.

Mix all cake ingredients. Put ½ of batter in well-greased square pan. Put ½ of filling on top, the rest of the batter and then topping. Bake at 350 degrees F for 45 min.

Enjoy and reminisce 🙂
