Honey Lavender Salmon

Ingredients 

2 x 6 ounce Atlantic salmon filets, skinless
4 tablespoons smooth honey
2 tablespoons water
2 tablespoons lavender
1 tablespoon sunflower oil
1 tablespoon lemon zest
1 teaspoon lemon juice
Salt and pepper to taste

  • Preheat oven to 375°F convection bake
  • In a heavy frying pan, heat oil over medium high heat. Sear salmon filets 1 min per side
  • In a small oven safe sauce pot, combine honey, water, lavender, lemon zest, and lemon juice. Warm over low heat until thinned
  • Once salmon is seared, place in the sauce pot and coat all surfaces with the honey mixture
  • Cook uncovered at 375°F convection bake for 8 – 10 minutes, until the filets become flaky
  • Remove from the pot, season with salt and pepper, and glaze with the remaining sauce. Serve hot.
