2 ½ cups grated potato
3 large eggs
2 tablespoons flour
1½ teaspoons salt
½ teaspoon nutmeg
1 teaspoon pepper
2 tablespoons grated onion
Place grated potato in a colander or sieve and squeeze out as much water as possible then put in medium sized mixing bowl.
Add to the mixing bowl the eggs, flour, salt, nutmeg, pepper and grated onion and stir well.
Heat canola oil, about a quarter inch deep in sauté pan. Add scoops of potato mixture to pan and flatten to about 3 inches across. Flip pancakes when brown and remember oil should not smoke.
Place cooked pancakes on paper towel briefly to remove excess oil. Serve with apple sauce.
Makes approx 4-6 pancakes
