Baked Banana Pudding with Caramel Sauce

Regular Bake

4 medium bananas mashed
4 tablespoon coconut oil
1 tablespoon molasses
*1 tablespoon fresh vanilla bean
1 cup nondairy milk
11/2 cups coconut sugar
1 teaspoon cinnamon
½ teaspoon salt
2 cups flour
2 teaspoons baking powder
½ teaspoon baking soda
1 cup Turkish dates, diced
½ cup walnuts

Pre-heat oven to 350F on convection bake.

Grease 8 muffin pans, line with muffin cups. In a large bowl add all dry ingredients together.

In another bowl mix all wet ingredients together. Pour the wet into the dry mix, do not over mix, fold in walnuts and dates. Spoon mixture into muffin tins evenly, bake for 25-30 minutes.

Banana rum caramel flambé sauce:Banana, Saute
1/3 cup sugar
2-3 bananas, sliced
1/3 cup dark rum
1 cup whipping cream
1 tablespoon vanilla bean

Caramelize sugar in a pan. Add banana slices and sauté 3-5 minutes. Deglaze with rum and flambé. Add cream and vanilla bean and simmer until sauce is thickened.

Serve with fresh berries (optional)


*Vanilla is scraped from inside the bean. One bean yields approximately one tablespoon.
