Mother’s Day Brunch

Here are some yummy treats you can serve Sunday morning. Compliments of Chef Sue at our Red Deer store.

Lemon Cheesecake PancakesPancakes

8 ounces cream cheese, softened
2 eggs, beaten
5 teaspoons all-purpose flour
1½ teaspoons white sugar
2 teaspoons butter, melted & divided
Confectioners sugar for dusting
1 teaspoon lemon juice
½ lemon, cut into wedges

Beat the cream cheese together with the eggs in a bowl until the mixture is almost smooth. Stir in the flour, sugar and 1 teaspoon of melted butter to make a batter.

Heat remaining 1 teaspoon of butter on a griddle or in a heavy frying pan over medium heat. Drop the batter onto the griddle in silver dollar-sized dollops and cook until lightly golden brown, about 3 minutes.  Turn the pancakes over and cook an additional 2 minutes.

To serve, sprinkle with confectioners sugar and drizzle with lemon juice.  Serve with lemon wedges.

Lemongrass Mint Lime Spritzer

2 stalks of Lemongrass
1 cup water
1 cup sugar
1 cup fresh mint, roughly chopped
Sparkling water
Lime slices & mint to garnish

Trim the tops and bottoms off of the lemongrass and remove the tough outer leaves until you reach the pale interior.

Chop into 2 inch pieces using a rolling pin or whatever heavy blunt object you have handy. Add the water, sugar and lemongrass to a small sauce pan. Bring to a boil over medium heat then remove from the heat.  Add the mint leaves and let steep for 15 minutes.  Strain out the mint and lemongrass.  Cool and store in a airtight jar until needed.

To make the spritzer, place some ice in a glass and add a tablespoon or two of syrup, to taste. Top with sparkling water, lime slices and mint leaves to garnish. Of course, if you’d like to indulge a bit, feel free to top this off with a splash (or two) of gin and reduce the sparkling water.

Strawberry Banana Smoothie

2 cups frozen StrawberriesCapture
1 fresh banana, peeled
1 cup milk (almond milk, if preferred)
1 cup ice
1 tablespoon honey, if needed to sweeten

Add all ingredients to a blender and pulse until combined.  Serve immediately. If the smoothie is too thick, add more milk.  If it is too thin, add more fruit and/or ice.
