Surf & Turf Kabobs

Here’s a delicious barbecue recipe that gives you an excuse to go outside and cook…no matter what the temperature!

Beef Kabobs

6 oz. sirloin, cut into 1 inch pieces
1 red onion cut into 1 inch pieces
6 button mushrooms

Marinade:
2 tablespoons olive oil
2 tablespoons red wine
½ teaspoon prepared mustard
½ teaspoon lemon juice
½ teaspoon red wine vinegar
½ teaspoon horseradish
¼ teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon onion powder
1 garlic clove, minced
1 sprig of fresh rosemary, finely chopped

Combine all marinade ingredients and marinate sirloin for at least 2 hours up to 12 hours.

Thread beef onto skewer alternating with pieces of onion and mushroom (these can be assembled a few hours before and then held in the fridge).

Cook on your grill over medium to medium high heat turning once to create nice grilling marks. It should take about 3 minutes per side.

Makes 2 kabobs

Shrimp & Scallop Kabobs

6 large shrimp, peeled & deveined
6 large sea scallops
1 shallot cut into 1 inch pieces

Marinade:
1 tablespoon sesame oil
2 tablespoons olive oil
1 lemon, zested & juice squeezed from half
Pinch of fresh black pepper
1 garlic clove, minced
1 teaspoon fresh dill, chopped

Combine all ingredients and allow seafood to marinate for at least 1 hour up to 3 hours.

Thread shrimp, scallops and shallots alternating onto the skewers, if necessary, these can be assembled and held in the fridge for an hour ahead of time.

Cook on your grill over medium to medium high heat turning once to create nice grilling marks. Season with a bit of salt and pepper before serving.

Makes 2 kabobs
