Quinoa Granola Bars
- 1 cup uncooked quinoa
- 1 cup whole rolled oats
- ½ cup raisins
- ½ cup dried apricots, chopped
- ½ cup chocolate chips
- 2 tablespoons canola oil
- 3 tablespoons brown sugar
- ¾ cup liquid honey
- ½ cup peanut butter
- ¼ teaspoon salt
Toast uncooked quinoa and whole rolled oats on a cookie sheet on convection bake at 350F for 7-8 minutes or until lightly brown.
Bring canola oil, brown sugar, honey, peanut butter and salt to a boil over medium heat and remove from stove.
Add the toasted quinoa and oats, raisins, apricots and chocolate chips into the mixture you just boiled and stir. Pour into 13”x 9” greased pan and pack down.
Bake on convection bake at 325F for approximately 20 minutes. When almost finished it will start to pull away from the sides of the pan. Let it cool before slicing into bars.
